Egg Drop Bone Broth Soup

Egg drop soup is a comforting Chinese dish featuring a light broth, eggs, and green onions. The use of bone broth adds health benefits like supporting joint health and boosting the immune system.   • 2 eggs lightly beaten
  • 1 quart bone broth
  • 1 tbsp fresh grated ginger
  • salt to taste
  • black pepper to taste
  • 1 tbsp scallions thinly sliced
  • 1 tsp sesame chili oil


  • Add bone broth to a pot with the ginger and some salt and pepper to taste. Bring to a simmer over medium high heat.
  • While the broth is heating, whisk two eggs in a bowl. Once the broth comes to just under a boil, whisk the eggs into the pot and remove from the heat.
  • Ladle into two bowls and top with the scallions and a drizzle of sesame chili oil. Serve immediately.


This soup is best eaten right away and is easy to halve for a single serving.
