Roasted Beet Tacos

  • 2 tbs olive oil
  • 1/2 yellow onion finely diced
  • 2 cloves garlic minced
  • 1/4 tsp coriander
  • 1/4 tsp cumin
  • 1/4 tsp hot pepper flakes optional, to taste
  • 1/2 tsp sea salt
  • 3/4 cup roasted beets
  • 4 grain free or corn tortillas we like Siete brand
  • 1/2 avocado sliced
  • 1/2 cup shredded purple cabbage
  • 1/2 lime
  • cilantro for garnish
  • 1 jalapeno diced
  • dairy-free or regular sour cream to taste, optional


  • Prepare roasted beets ahead of time. Preheat your oven to 400. Scrub 3-4 beets under running water and rub with some olive oil. Place them on one half of a piece of parchment paper. Add 1 tablespoon of water and sprinkle with sea salt and pepper. Fold the top half of your piece of parchment over the beets and roll the edges of the parchment, completely enclosing them so no steam or water can escape. Place on a baking sheet and roast for an hour and a half. Set aside.
  • Heat a large pan over medium heat. Add the olive oil, onion, garlic, coriander, cumin, salt, black pepper and hot pepper flakes. Cook, stirring gently for about 5 minutes until the onions start to turn translucent. Add in the roasted beets and cook for 10 more minutes until caramelized.
  • To build your tacos, add the beets to your heated tortillas and then top with cabbage, avocados, cilantro, jalapeno, sour cream and a squeeze of lime juice.


You can also add some black beans to this if you can digest legumes. We have tried with and without and both are lovely options.
