  • 2 tbsp coconut oil
  • 2 cloves garlic minced
  • 2 tsp fresh ginger peeled and minced
  • 1 tsp curry powder
  • 1 tsp garam masala
  • 2 cups frozen peas we like organic petite peas
  • 2 cups full fat coconut milk
  • 10 ounces baby spinach
  • salt to taste


  • Heat the coconut oil over medium heat in a large saute pan. Add in the garlic, ginger and the spices and cook for a few minutes, making sure to stir to prevent the spices from burning.
  • Once the spices are fragrant, add the peas and the coconut milk to the pan and cook for an additional 5 minutes. Add in the spinach and cook for 3-5 more minutes, until the spinach is wilted. Taste for seasonings and serve over either coconut cauliflower rice, white or brown rice or eat with some naan if that works in your diet.
