Tortilla Soup

Tortilla soup is a hearty and flavorful Mexican dish celebrated for its rich taste and comforting warmth. This traditional soup typically features a tomato-based broth infused with spices like cumin and coriander. Loaded with chicken and diced vegetables, the soup is garnished with crispy tortilla strips, avocado, cilantro, and a squeeze of lime for added freshness. Use vegetable broth and omit the chicken to make it vegetarian or vegan.   • 1 onion diced
  • 4 carrots diced
  • 2 stalks celery diced
  • 4 cloves garlic minced
  • 1 tsp cumin
  • 1 14.5 oz can crushed fire roasted tomatoes with green chili
  • 1/2 tsp coriander
  • 2 tbsp olive oil
  • 2 quarts chicken or vegetable stock or bone broth
  • 1 avocado diced
  • 2 roasted chicken breasts diced (optional)
  • 1 jalapeno diced
  • 1/2 bunch cliantro chopped
  • sour cream or dairy-free alternative optional to taste
  • corn tortilla chips or grain-free tortilla chips crumbled
  • 1 tsp salt more or less to taste
  • 1/2 tsp black pepper more or less to taste
  • 1 lime


  • Heat olive oil in a large pot over medium heat. Add in onions, carrots and celery and cook until the onions are translucent. Add in salt to taste, black pepper, cumin and coriander and cook for 30 seconds.
  • Once the spices are fragrant, add in the tomatoes and whatever stock you are using and bring to a boil. Reduce heat to medium low and simmer, uncovered, for 30 minutes. If you are adding in the chicken breasts you can add them to the simmering broth after it comes to a boil. Stir occasionally.
  • Taste the soup for seasonings and add salt and pepper if needed. Turn the heat off and ladle into bowls with the crushed tortilla chips on the bottom. Top with jalapeno, avocado, sour cream, cilantro and a squeeze of lime juice or whatever other toppings you like and serve.
